Today an easy salad recipe with a delicious soy sauce dressing. Delicious for lunch, but can also be eaten as a main course. The recipe can also be adapted to personal preference. For example, add some fried mushrooms or sesame seeds. You could also adjust the dressing by, for example, replacing the soy sauce with a teriyaki sauce. In short, a nice recipe to experiment with and a recipe that is easy to adjust to your own preference.
Preperation: 20 minutes
Quantity: 2 persons

Ingredients:
250 g tenderloin (cubed)
75 g mixed leaf lettuce
75 g arugula
50 g bean sprouts
1 tablespoon of olive oil
1 teaspoon of paprika
4 tomatoes (cut into wedges)
1 lemon (squeezed)
4 tablespoons of olive oil
Dressing ingredients:
4 tablespoons of soy sauce
2 tablespoons of sherry or
2 tablespoons of white wine
1 teaspoon of honey
Preperation:
Rub the tenderloin with olive oil and sprinkle the meat with paprika, salt and pepper.
Mix the tomatoes with the arugula and leaf lettuce. Spoon in the lemon juice and 2 tablespoons extra virgin olive oil.
Pour hot water and then cold water over the bean sprouts in a colander. Drain. Mix the ingredients for the dressing with the rest of the extra virgin olive oil.
Heat a grill or frying pan on a high setting. Sear the meat closed and fry in 2-3 minutes brown and rosé, depending on the thickness.
Divide the salad between plates. Place the tenderloin tips on top, spread the bean sprouts over it and sprinkle with the dressing.
