Chorizo is a famous type of sausage in Spain, you can get it everywhere and the sausage is characterized by its spicy taste. This nutritious stew has a delicious slightly spicy Spanish flavor thanks to the chorizo and combines perfectly with the white beans and kidney beans. This dish is delicious with some rice, mashed potatoes or bread.
Preperation: 20 minutes + 30 minutes simmer
Quantity: 4 persons

Ingredients:
230 g Chorizo Sausage
400 ml Tomato Cubes
2 Cloves of Garlic
1 Large Onion
1 Eggplant
1 Bell Pepper
250 g Mushrooms
1 Small can of mashed Tomato
250 ml of Water
330 g White beans
400 g Kidney beans
Pinch of Chili
Pinch of Rosemary
Preperation:
Cut the Chorizo into pieces and chop the onion and garlic. Bake these two briefly in a (roasting) pan. Cut the bell pepper and eggplant into pieces and add to the pan with the mushrooms. Also stir-fry the vegetables for a few minutes.
Then add the rosemary and a small pinch of chili. After that add the mashed tomato, water and tomato cubes and stir well. Let everything simmer for 20 minutes. Finally add the kidney beans and white beans. Let it all simmer for 10 more minutes.
If the sauce is a little too thick, add a little water and if you want it to thicken, then remove the lid while simmering. Finally taste and decide if more pepper or salt is needed.
