A delicious salad from Neapolitan Italian cuisine. Like pizza Margherita, it features the colours of the Italian flag: green, white, and red. Caprese is preferably consumed in Italy as a so-called ‘primo’, so instead of, for example, a pasta. This salad is very easy to make and may be eaten any time of day. It is also suitable for vegetarians.
Preperation: 10 minutes
Quantity: 2 persons

Ingredients:
2 tablespoons pine nuts
2-3 tomatoes
2 scoops of mozzarella
75 grams of arugula
10 basil leaves
2 tablespoons extra virgin olive oil
2-3 teaspoons of balsamic vinegar
pepper and salt
Preperation:
Heat a frying pan and color the pine nuts light brown, then set aside.
Cut the tomato into thick slices, and cut the mozzarella into thin slices.
Place some arugula on a plate and divide the tomato and mozzarella on top of this.
Cut or chop the basil into pieces and divide over the salad. Season with salt and pepper, and sprinkle with olive oil and balsamic vinegar. Garnish the plate with the pine nuts.
