A typical dish of the Catalan cuisine. The canelones are mainly eaten with the family on weekends and during certain holidays. For example with Sant Esteve. (Boxing Day in Catalonia) Catalan cuisine is the cuisine from Catalonia. It may also refer to the shared cuisine of Roussillon and Andorra, the second of which has a similar cuisine to that of the neighbouring Alt Urgell and Cerdanya comarques and which is often referred to as “Catalan mountain cuisine”. It is considered a part of western Mediterranean cuisine.
Preperation: 30 minutes + 20 minutes oven
Quantity: 6 persons
2 packs (approx. 500 g) of dried cannelloni or lasagna sheets
150 g grated Parmesan cheese
15 g butter
4 tablespoons of olive oil
1 small onion, finely chopped
6 garlic cloves, minced
60 g serrano ham, in strings
250 g minced pork
250 g minced beef
60 g fresh bread crumbs
5 tablespoons of sweet sherry or vermouth
2 egg yolks, beaten
60 g of butter
60 g of flour
5 dl whole milk
a pinch of freshly grated nutmeg
salt and pepper
For the dried cannelloni boil them in water and then pour them in cold water so that they don’t stick together.
Preheat the oven to 220 ℃. Grease the baking dish with a little butter.
For the sauce, melt the butter on a low heat in a pan. Remove the pan from the heat, sprinkle with the flour and beat everything together. Return the pan to the heat and cook for 2 to 3 minutes while stirring. Add the milk little by little while stirring. Reduce the heat and simmer, stirring, for 3 to 5 minutes until the sauce remains on the back of the spoon. Season with salt, pepper and nutmeg. If necessary, thicken the sauce by keeping it on the fire longer.
Make the filling. To do this, heat the olive oil in a frying pan and fry the onion and garlic gently for 3-4 minutes. Add the ham and both types of ground beef and cook for 5 to 6 minutes until the meat is cooked. Spoon the breadcrumbs through and bake for 1 to 2 minutes. Add the wine and some salt and pepper and cook for about 4 minutes until the wine has reduced. Remove it from the heat and spoon the yolks through it.
Mix the meat mixture in a bowl and fill the cannelloni with your hands one by one and place them on the baking dish next to each other. If you have used lasagna sheets: divide the filling over the dough sheets and roll them up.
Spoon three-quarters of the grated cheese into the sauce. Spoon the sauce over the cannelloni. Sprinkle the rest of the cheese and spread pieces of butter over it.
Place the canelones in the oven for 15-20 minutes until the top is golden brown.
